A little know fact in Bend's oft forgotten baking lore is that a tiny closet of a shop near the corner of NW Columbia St & NW Galveston Ave bore witness to two of best Bakeries this town has experienced. The more recent and still resurgent being the beloved Foxtail Bakery. But before Foxtail there was Baked Bakery, a quirky shop featuring delightful breads and pastries, odd hours, and Gordon: an absolute gem of a baker who owned the joint. The Baked Spice bar is an homage to days spent with his Dad at their favorite bakery in Grand Rapids MI, with flavors and textures akin to Christmas in overtime. These bars were a staple at Lonepine Coffee in their early days. And I'm absolutely delighted to once again return these to Bend's foodscape with Gordon's Blessing. Be warned: these bars are dangerous; it's almost impossible to eat just one.
