This loaf harkens of flavors and memories of the Southwest; earthy, rustic, mildly spiced, all seemingly simple, yet uniquely complex. A blend of whole grain and high-extraction heritage wheat flours, milled from grains originally grown in the deserts of the US Southwest and Northern Mexico, toasted heritage Blue Corn flour, roasted Poblano Peppers, and ample levain (aka sourdough starter) afford an earthy, smokey, mildly spiced, yet robust crumb. The crust, rolled in a mix of Blue & Red Flint heirloom corn meals, toasts to an explosive crispness of flavor and nostalgic Sonoran delight.
