This loaf is a work of local to regional beauty. Landrace wheat and Heritage corn grown and milled in the Willamette Valley; cheese from the Oregon Coast; and, freshly harvested jalapaños – the bread’s spicy soul – afforded by the loving labor of Boundless Farmstead just a few miles east of my bakery. As bread goes, this is a definite favorite with mi familia. And it’s ever so tasty to toast! Abundantly hydrated landrace wheat varietal, Yecora Rojo, produces a tender, moist crumb that nestles a porridge of cracked corn, jalapeños, and sharp cheddar. The loaves are rolled in Heirloom Floriani Red Flint Corn meal before baking, which lends an explosive, crispy crust, and whispers of sweet straw and roasted street corn. Grilled Cheese anyone?!
