Spelt (Triticum Spelta) has been cultivated for at least 7-millenia. That’s right, since modern human history’s roots in the Neolithic Age. Seriously old school. Spelt became quite popular across what is now called Europe – where its ability to thrive in relatively poor soil and colder climates – made it a grain of choice by the late Bronze Age. History aside, Spelt offers an exquisite flavor that’s nutty & sweet, two characteristics I strive to maintain in my own life, and find delightful in Bread. This Ancient Grain affords a delicate, slightly creamy crumb with a grassy earthiness, which is beautifully at home in the loft provided by the freshly milled wheat varietal, Yecora Rojo. Combined they afford a rustic flavor, pronounced though not overbearing tang, and an explosive, crispy crust.
