I've been told that straightforward "French Bread" is the classic pairing for, well, almost anything. Well, I must confess that I'm not exactly sure what "French Bread" is in narrowly defined terms. So, as is often the case in times of doubt, I remember my grandfather, who we called Bunk. Bunk always implored me to consider that “the shortest distance between two points is a straight line”. Whatever the question, Bunk's principal concern focused on gently moving forward with honesty, integrity, transparency, and kindness. And the Loving power of his straightforward example informs my whole approach to Life, including baking Bread. This sourdough loaf primarily tastes of the wheat varietals it’s made from, nada mas. The malty, rich, almost pungent Landrace, Yecora Rojo, that also carries hints of butter and nuts, intertwines with the rich, slightly sweet, earthiness of Sonora, and the beautiful yellow hue and complex buttery character of Amarillo all of which cradles an earthy blend of toasted sesame & nigella seeds.
