Seeded Rye with Kvass

This bread is a project of love, joy, and quiet attention. Old rye bread is ground, soaked with bread spices (caraway, fennel, anise), before fermenting for a few days with honey, dried figs, dates, raisins, and a bit of rye starter. The bread itself employs a long, slow hot soaker of sorghum syrup, sunflower, pumpkin, flax, and sesame seeds; and, a rye levain of equal fermentation length. These combine with additional fresh, whole rye flour and sea salt to pre-ferment for an additional 10-12hrs before finally being mixed with the Kvass, cracked rye, and a whisper of the heritage wheat varietal Fife. The final rise is an attentive undertaking, before the loaves are baked low and slow. Without doubt, this loaf is one of my favorites. Slice thin and enjoy! Oh, and keep the loaf in an airtight bag or container in the fridge.
